Viva La Mexico ~ Cheesy Taco Bake

Tonight was one of those naughty comfort food nights.
I made something new and exciting . . . I found this recipe online and adjusted it a little and it was DELICIOUS!

I thought I would share it with you guys (My version of course)


500g of beef mince
1 block of Philadelphia cream cheese
1 sachet of taco seasoning
1 jar of tomato salsa
1 box of cannelloni tubes or HUGE pasta shells
Tasty cheese – grated
Chopped shallots and sour cream (to garnish)

Preheat oven to 220C

In a frying pan cook mince and add taco seasoning.
Add cream cheese, cover and simmer until cheese is melted. Blend well and take off heat. Allow mince mixture to cool.

Pour a layer of salsa on the bottom of baking dish.

Stuff each cannelloni tube with the mince mixture and place each tube side by side until the base of the baking dish is lined.

Cover tubes with remaining salsa and a layer of grated cheese.

Bake for 30 – 40 minutes or until pasta tubes are cooked through.

Garnish with chopped shallots and serve with a dollop of sour cream.

For those who live life on the spicy side, its so easy to add some jalapenos to the salsa, to warm things up a little. (I served mine with a lovely crisp garden salad, just to lighten it up a little)


So easy and even passed the picky boyfriend test, so definitely a winter winner!
